Man, my experience with the guard counter tutorial was funny. I read about the guard counter, how to perform it etc. Soldier boy runs up, swings and out of habit I parry and riposte him... To be frank I forgot about counter guard afterwards, but seeing others utilize it makes me excited for the next test.

The one you described is a guard counter, after blocking with a weapon or shield you can attack after for a slightly faster attack. Parries are harder to time and allow for a ton of damage. Parry sets you up for a riposte. A successful parry will basically stun someone for a second. Guard counter is an attack used right after blocking.
