I've never had this much trouble finding a rare drop in Stardew. I found 4 Prismatic Shards in the volcano but never a mummified bat. Seems to be a Switch issue. One of those random drops could be the mummified bat. I got multiple mummified bats on the worst luck day possible, no buffs apart from health &speed. Also, if you didn’t take the Prospector route, you’ll have a slightly better chance of getting it. It can drop via bombs, but bombs can cause it to dislodge and fall into the lava.
